To give students the option to enter a custom response for choose one or choose many survey questions you can use the Add Other Option.
How do I add an "other option" to choose one or choose one survey questions?
- Open up the survey you are interested in editing

Choose Many
or
Choose One
question type

You will see the Add "Other" option at the bottom of the question and once you add it you will not be able to edit it since the student will be entering a response
